This is a special black honey processed lot grown by Leonid Ramirez at his Finca La Cortina de Hierro. The black honey process aims to create more depth of flavor by leaving additional mucilage (fruit of the coffee cherry) on the pulped bean. That, along with less turning on the drying bed encourages more fermentation producing unique characteristics. You can expect different flavors compared to its washed relative - apricot & stewed peach, juicy body with a lingering brown sugar aftertaste.
