Heleanna Georgalis is at the forefront of exporting Ethiopia’s finest coffees. After her father’s sudden passing, Heleanna was left with a choice – continue to pursue her career in investment banking after earning an MBA, or carry on her father’s legacy, a man devoted to his love for coffee and his love for Ethiopia. She chose the latter. Heleanna inherited Moplace in 2008, becoming the fourth generation in her family involved in coffee, and while still upholding her father’s legacy, Heleanna has managed to carve out her own path pushing boundaries around coffee processing and becoming renowned for the quality of coffee she consistently produces.

Under Heleanna’s leadership, Moplaco is constantly evolving and this most recent Bensa Kokosa represents the quality standards she has raised for the industry at large. Her innovative use of the “Kenya” process, a variation of the traditional washed process that focuses on water conservation, produces a unique augmentation of familiar washed process coffees from the same region. The coffee is de-pulped and set to ferment in cement holding tanks for roughly 36 hours without the addition of water. The mucilage is then washed and subsequently dried on raised beds. In addition to conserving water, this process adds depth and a distinct complexity to the coffee.
