Alejandro Martinez - Veracruz, Mexico
This coffee is a single variety lot from Alejandro Martinez's, Finca San Jose. While he grows multiple varieties across his 250-hectare farm, this selection is an isolated harvest of Mudo Maya. Mundo Maya, is a first-generation hybrid originating from a cross between a rust-resistant descendant of the Timor Hybrid, and an Ethiopian landrace originally collected in Ethiopia. Selection of Mundo Maya was done by ECOM-CIRAD in Nicaragua.
First generation hybrids in Central America are part of an effort by breeders to increase the genetic diversity of varieties in the region since the traditional American varieties are severely genetically constricted.
Alejandro has careful harvesting and processing practices at San Jose. Once picked and sorted for ripeness, the coffee is fermented in the cherry overnight for about 18 hours. It is then depulped the following day and allowed to slowly dry for up to 32 days on his rooftop drying structure.
